When Alicia of The Charity Wedding tweeted that she was offering recipe to any willing takers, we responded because we love cooking and experimenting with different recipes. She sent us a recipe for Satay Salmon, which we then served with Jacket potatoes & stir fried Broccoli & Onions.
This makes enough sauce for 4 salmon fillets with sauce left over for your chosen sides.
Ingredients
4 tbsp Soy sauce
2 tbsp Peanut butter
2 tbsp honey
2 tsp White vinegar
1 Garlic clove
1 large Onion, diced
2 tsp Sesame oil
1 tsp of hot Chilli sauce
A pinch of Black pepper
Alicia’s recipe was:
” Preheat oven to Fan 2oo°C / Electric 220°C / Gas mark 6.
Use a mini food processor to make a paste out of the garlic, hot chilli sauce & pepper & onion.
Add the paste to the other ingredients in a container with a lid & shake together until emulsified.
Place Salmon fillets in baking tray lined with 3 tbsp spoons of the mixture.
Spread remaining mixture on top of the Salmon fillets and cover the baking tray.
Bake for 35 minutes covered, then uncovered for 5 – 10 minutes to get crunchy topping.
Serve with rice or potatoes or couscous.”
It was delicious, even though we didn’t have a food processor so the onions and garlic remained chunky & crunchy (which we like). Adrian’s not normally a fan of Peanut butter but he loved this so much that we had to cook it again the following week! Thanks Alicia.
